Chicken & Pineapple Sandwiches
1 (8 oz) can crushed pineapple, well drained
1 cup cooked chicken, diced
2 cup walnuts, finely chopped
1/2 cup mayonnaise
Bread of your choice, buttered
In a medium bowl, mix pineapple, chicken, walnuts and mayonnaise and stir until well combined. Spread filling on the top and bottom slices of buttered bread and assemble sandwiches. Trim crusts and cut into tea sandwiches.
Smoked Salmon Sandwiches
1/4 cup mayonnaise
1 T minced green onion
1 T minced fresh dill weed
1 tsp prepared horseradish
Pepper to taste
4 pieces smoked salmon
12 thin cucumber slices
2 tsp butter, softened
8 slices pumpernickel bread
In a small bowl, mix mayonnaise, green onion, dill weed, horseradish and pepper and stir until well combined. Set aside. Spread butter thinly over pumpernickel bread slices then spread mayonnaise mixture on each bread slice. Divide salmon and cucumber slices evenly between half of the bread slices then assemble sandwiches. Trim crusts and cut into tea sandwiches.
Coconut Butterballs
1 cup butter or margarine, softened
1/2 cup sugar
2 tsp vanilla
2 cup flour
1/4 tsp salt
2 cup pecan halves
1 egg white
1 Tbsp water
3/4 to 1 cup coconut
Preheat oven to 350-degrees. In a large bowl, cream butter, sugar and vanilla until fluffy. Blend in flour and salt and mix until thoroughly combined. Shape teaspoonfuls of dough around each pecan half to form a ball. Beat egg white and water with a fork until just frothy. Dip dough into egg white mixture and then into coconut, rolling until fully coated. Place balls onto a lightly greased baking sheet. Bake for 15 to 18 minutes or until lightly browned.
Lemony Light Cooler
1 (750 ml) bottle dry white wine, chilled
1/2 cup sugar
1/2 cup lemon juice
1 (32 oz) bottle club soda, chilled
Ice
In a pitcher, combine wine, sugar and lemon juice. Stir until sugar is dissolved. Cover and chill. Just before serving add club soda. Serve over ice.
Purple Passion
1 (6-oz) can grape juice concentrate, thawed
3 juice cans cold water
1 juice can vodka
1/2 cup lemon juice
1/4 cup sugar
Ice
In a pitcher, combine grape juice concentrate, water, vodka, lemon juice and sugar. Stir until sugar dissolves. Cover and chill. Serve over ice.
