The recent increased popularity of herbs and spices is probably the greatest thing that has happened to American cookery since the Indians introduced the Pilgrims to corn. No dish, however routine, will ever be dull when these subtle flavorings are skillfully and discreetly added. Tasty recipes for the following categories: appetizers ... beverages ... breads ... cakes and cookies ... cheese and egg dishes ... chili dishes ... curried dishes ... desserts ... fish and shellfish ... meats: beef, lamb, pork and veal ... poultry and stuffings ... salads and salad dressings ... sandwiches ... sauces ... soups ... vegetables.
What Are Herbs and Spices?
In the broad sense the word “spice” is used to designate any aromatic product of vegetable origin which adds zest to food. Separating these seasonings into categories is difficult, since the usual division into “herbs” and “spices” involves many borderline cases. The following classification may help to clarify the situation:
True Spices: seeds, fruits, barks, or roots of various plants native to the tropics; examples are allspice, cinnamon, cloves, ginger, mace, nutmeg, pepper. Spices are always dried; some are available whole as well as powdered.
Herbs: plants grown in the temperate zones, the leaves of which are used fresh or dried; among these are basil, chervil, marjoram, oregano, rosemary, savory, sage, thyme.
Aromatic Seeds: seeds of various herbs, some grown in hot climates, some in mild, some in either. These include anise, caraway, coriander, cumin, dill, and poppy seeds. The seeds are classed as spices, but in some cases the leaves are also used as herbs.
