Sample Recipe(s): (ALL look good, but EVERYBODY loves soup recipes)
Split Pea Soup With Ham Balls
1 ham bone with some ham on it
1 pound split peas
2 quarts water
1 can (1 lb 12 ozs) tomatoes
1 onion, minced
2 small potatoes, pared, diced
3 carrots, diced
1 cup chopped celery
1/4 cup minced parsley
1 teaspoon salt
1 bay leaf
Pepper
1 egg for ham balls
2 tablespoons minced parsley
2 tablespoons flour
1 package frozen peas
Put the ham bone in a big kettle after removing enough ham to make 2 cups, ground. Add split peas, water, tomatoes, and onion. Cover and simmer 2 hours. Add vegetables and seasonings; simmer 30 minutes more. Meanwhile add to the ground ham the beaten egg, parsley, and flour. Shape into 1-inch balls. Addd to soup and simmer 10 minutes. Add frozen peas last 5 minutes.

Except for the green pea garnish, this dish may be made several days early.
Go Withs: Crusty rolls, crisp toast or crackers, and a big fruit salad
Wine: California Rose
Spring Soup
1 medium onion, sliced
1 tablespoon butter
1 medium potato, sliced
1 sliced carrot
3/4 teaspoon salt, or to taste
3 cups water
1 can (6 oz) tomato paste
1-1/2 cups chicken broth
2 tablespoons rice, uncooked
1 cup fresh spinach, coarsely shredded, packed tight
(Watercress is good in this soup if you’re not too fond of spinach)
Cook onion slowly in butter until deliately browned. Add everything but spinach. Simmer, stirring occasionally, for 45 minutes. Add spinach and boil 5 minutes longer. Serve to begin a roast beef dinner.
